This is such an easy and impressive evening meal. Perfect for when you’ve had a super busy day and you’ve got the girls coming for supper.
Homemade gnocchi is obviously superior to the shop-bought stuff but, remember, this recipe is about speed and ease. Besides, this is all about the sauce!
Decadent, creamy and more-ish – make this when dieting is the last thing on your mind.
200g Gorgonzola or Dolcelatte cheese
100g heavy cream (double cream if in the UK)
a bag of washed spinach
I pack of gnocchi
Parmesan, for grating
Salt and pepper
While your pan of salted water is coming to the boil, for the gnocchi, start your sauce.
Melt a good knob of butter with a tablespoom of olive oil on a low heat.
Add the blue cheese and cream, stirring frequently to ease out the lumps.
Once all melted and delicious, season to taste. Please be careful with salt!
Set aside and either wilt the spinach in a saucepan, or microwave according to pack instructions.
Once the water is boiling, add the gnocchi. Once they float to the top of the pan, they’re done. This takes just minutes!
Combine the gnocchi with sauce and place on top of a bed of spinach.
